Grana Padano
As Parmigiano Reggiano, Grana Padano has a very long history, which began centuries ago.
During the last 150 years, Parmigiano Reggiano and Grana Padano took two different routes: in the production zone of Parmigiano, cowsheds didn’t expand, and the medium number of wheels daily produced remained 20, while in the production zone of Grana Padano cowsheds associated one to the other and became able to produce up to 100 wheels daily.
The minimum aging for Grana Padano is 2 months lower than Parmigiano Reggiano’s one, and a special mark is put on the wheels that exceed to the 20 months aging.
Tastes and scents are very similar one wheel to the other, and they are simply strictly connected with the cheese aging: they are softer and sweeter if the cheeses is between 10 and 19 months old, while they become more spicy and straw in scent as the cheese becomes older.
