This is a cheese even today salted by hand, with a soft and very melty consistency, generally without holes and pale-yellow in colour. The flavour is sweet but also, because of the long aging, very intense. This Taleggio is aged for more than 50 days in pinewood cases, in the traditional cellars of the Taleggio valley.
