The warehouse

Boni’s warehouse was recently designed and built up thinking about the characteristicts that a warehouse needs to preserve and age different types of cheeses.

The shelfs are made with hard fir and they were thought to help the cleaning and turning machine in their daily operations; also wheels’ charge- and download-operations are possible and easy thanks to studied spaces that were left between one shelf and the other.

This werehouse can house up to 30.000 Parmigiano Reggiano or Grana Padano wheels and temperature and humidity are always controlled and kept constant thanks to a controller system.

The company houses also a refrigerator, where fresh cheeses are stocked, and a packaging department, where the cheeses are portioned and vacuum-packed.

    Still today, as in the past, the production of Parmigiano Reggiano requires experience, care and passion. It is more than 8 centuries that Parmigiano Reggiano is produced by dairymen following the same production steps.

    Tastes and scents are very similar one wheel to the other, strictly connected with the cheese aging: softer and sweeter if the cheeses is between 10 and 19 months old, more spicy and straw in scent as the cheese becomes older.
